Easy Gluten-Free & Dairy-Free Peanut Butter Cookies

Who doesn't love a easy recipe with only five ingredients??? Even better when it is gluten and dairy free! This recipe is sure to be a winner for anyone that loves peanut butter. They are delicious and have a great texture.

The five ingredients that are needed for this recipe are a banana, applesauce, sugar, vanilla extract, and peanut butter. For me, these are always things that I have around the house. This recipe came about because I had a friend with a gluten allergy coming over and wanted to make a snack for them. I looked in the pantry, threw these things together, and luckily it came out great! I also added chocolate chips, which is an optional addition to these yummy cookies.



All you need to do is mix all the ingredients together in one bowl and bake. Super simple and fast! I love to do one bowl as much as possible. I make sure to mash the banana first, using a fork or a potato masher. Once that is done, I mix in each ingredient one at a time, making sure everything is well incorporated. It is helpful to add the peanut butter last (unless you are adding chocolate chips) because it is the hardest to mix in.



For baking, the batter is very sticky, so you want to put parchment paper on your baking sheet if you have it. You could also grease the pan. The only thing that is different about baking these cookies is that you want to put them on the very top rack. This makes sure that the cookies don't burn or caramelize. Baking them at 350 degrees on the top rack gives a beautiful cookie texture. You won't even realize there is no flour in them!



As with most vegan baking, we recommend letting them cool on the baking sheet for about five minutes before transferring them to a cooling rack. Once they are completely cooled, they are ready to be enjoyed.



They were seriously addicting in our house and were gone in a few hours. We hope you enjoy them just as much!
