Ratatouille Bruschetta

We are always looking for new ways to use the vegetables that we are growing in the garden in our cooking. Going with a ratatouille inspiration for this is perfect since that is where the dish originated from. Farmers would make ratatouille in order to use the vegetables that were ripe and needed to be eaten. This ratatouille bruschetta is easy to make and tastes as fresh as summer. It makes a perfect party platter or healthy lunch.



This bruschetta is flexible to fit your needs. For example, you can use any tomatoes in this recipe. You can choose your favorite from the grocery store or pick the tomatoes that are ripe in the garden. If you aren't an oregano fan, change out the herbs to what is tasty for you or increase the amount of the other herbs in our recipe. Anything can be easily adjusted to fit your preferences or what you are currently growing. That actually will make it most authentic to the origins of ratatouille.


In this recipe, we sweat the tomato, zucchini and eggplant. This allows the excess water and moisture to be drained from the vegetables. This isn't necessary if you don't have time. It is just one extra measure to ensure that the bread does not get soggy. However, we recommend scooping the topping onto the baguettes right before you eat it, so that should solve any sogginess problems that might arise.


Eggplant is a nightshade plant. If consumed in high concentrations, it can be toxic. To be extra safe, we are flash cooking our topping to ensure these toxins are cooked out. However, the topping is delicious without being cooked and is safe to eat either way. Cooking also allows for the flavors to be infused, especially the garlic, onions and herbs into our vegetables, so there is a double benefit.



The best bread for bruschetta is a French baguette because of its firmness, however, you can choose another bread if you prefer. We definitely considered using French bread when we made this for ourselves! Oil your bread to your tastes before and after toasting. We enjoyed ours with a drizzle of oil after baking and it was a delicious addition!


Once your topping is completed and your bread is toasted, it is ready to be served! We recommend placing the topping in a bowl on a platter with the bread. You can scoop your topping onto the bread right before you eat it so that it stays crisp.
